I love Cara Mia Sun dried tomatoes. I could sit down and eat an entire jar of them! I love the sweet roasted taste of the tomatoes and all the extras they put in the jar. That's why they go so well with this quick pasta salad!
Pasta With Broccoli And Sun-dried Tomatoes
1 pound rotini pasta
1 medium sized broccoli
crown, cut into bite sized florets
1 small onion, minced
1/3 cup Cara Mia Sun Dried Tomatoes, rough chop
1 teaspoon extra virgin
olive oil
1 teaspoon of oil from
jar of tomatoes
1 garlic clove, crushed
Salt and pepper to taste
Cook pasta to al dente, according to package
directions. Reserve 2 tablespoons of pasta water. When pasta is done, drain and return to warm
pot with heat off.
Meanwhile, place broccoli in a microwave-safe
bowl with 3 tablespoons water. Cover tightly with plastic wrap and microwave on
high for 5 minutes, or until tender. Remove and set aside.
In the pasta pot, add the sun dried tomatoes
along with 1 teaspoon of the oil from the jar.
Add the onion and garlic and toss well.
Add pasta water as needed to create an evenly-distributed sauce. Season
to taste with salt and pepper, and serve warm.
