 Caramel Apple Fritter Bread























Warning!  This incredibly delicious, decadent, delightful, delectable bread is not for the faint of heart!   It is awesome. It’s wonderful. It’s everything you want in a sweet quick bread.  This is the bread I love to give away for gifts during the holidays.  It will blow your mind.  But then you could have figured that out by the title right?


Caramel Apple Fritter Bread

Bread:

 cup brown sugar, not packed
1 teaspoon ground cinnamon
 cup white granulated sugar
½ cup unsalted butter, room temperature
¼ teaspoon salt
2 large eggs
1½ teaspoon pure vanilla extract 
1½ cups all-purpose flour
1¾ teaspoons baking powder
½ cup whole milk
2 Honey Crisp or Pink Lady apples, peeled and chopped 
½ cup salted caramel sauce (I used Smuckers Salted Caramel Topping)






NOTE:  you will need two 9 x 5 loaf pans for this recipe. One for mixing and one for baking.










Preheat oven to 350 degrees.  Set out two loaf pans.  Spray one of the  
9 x 5 loaf pans with non-stick cooking spray. No need to spray the other one.

























Mix the brown sugar and cinnamon together in a small bowl. Set aside.

In a large bowl, cream together the butter and sugar for about 2-3 minutes until very light and fluffy.  Add in the eggs, one at a time, scraping down after each addition. Finally, mix in the vanilla.
In a large bowl, mix together the flour, salt, and baking powder.  Add these dry ingredients to your creamed butter and sugar mixture and stir until well blended.  Add the milk and continue to mix until you have a smooth batter.

Next pour only half the batter into the loaf pan that is not sprayed. Sprinkle only half the apples on top of the batter and then sprinkle just half the brown sugar mixture all over the top.  Finally drizzle ¼ cup of the salted caramel across the top. Now repeat that process with the next layer.  

























Pour the remaining batter in the same loaf pan and follow with the remaining apples. Top the apples with the remaining brown sugar mixture and drizzle the remaining ¼ cup of caramel sauce over the top.

Now you are ready for the other loaf pan that has been sprayed. Using a large spoon, scoop the batter from the loaf pan with the batter and apples and drop into the sprayed loaf pan. This will give you the swirled effect without having to run a knife through it. Once you have scooped all the batter into the pan, tap pan on the counter to even out.




























Bake at 350 degrees for about 50-60 minutes or until  a toothpick inserted in the center comes out clean.  Remove from oven when finished baking and allow the bread to rest for about 5 minutes before flipping it out on a wire rack to cool for another 15 minutes.  You are now ready to glaze.
























Caramel Glaze

¼ cup salted caramel sauce or topping
½ cup of powdered sugar
1-3 tablespoons whole milk or half and half
Whisk together the powdered sugar, salted caramel sauce or topping, and a tablespoon at a time of the milk until smooth and there are no visible powdered sugar lumps. Use more or less milk to get the consistency you want. Drizzle glaze on bread.

Apple Fritter Pull-A-Part Bread
















Pretty soon it will be that time of year when I love to go to the apple orchards and gather up my favorite ingredient for baking. If you follow my recipes,  you'll find hundreds of apple recipes....like this incredible pull-apart apple fritter bread.  OMG….how can anything so easy to make be this incredible!  Now this is a treat that will make you forget your end of summer blues for sure!  I give you the choice of two different glazes because I like both so much I could choose which one I like better! 














Apple Fritter Pull-A-Part Bread

1 Pillsbury Grands Refrigerated Buttermilk Biscuits (8 in a can)
2 medium granny smith apples, finely diced
1 teaspoon lemon juice
 cup brown sugar
2 tablespoons granulated sugar
½ teaspoon vanilla extract
1 teaspoon ground cinnamon
¼ teaspoon ground ginger
½ teaspoon nutmeg
Pinch of salt

Preheat oven to 350 degrees.  Spray a 9×5 inch loaf pan with non-stick cooking spray.

In a small skillet over medium heat, combine diced apples, lemon juice, brown sugar, granulated white sugar, cinnamon, nutmeg, and a pinch of salt. Cook, stirring occasionally, until apples are soft and sauce has thickened, about 10 minutes. Remove from heat and set aside.

Open your biscuits and lay them out on a cutting board.  You now want to either cut each biscuit in half or carefully pull each one apart in the middle to make a total of 16 rounds. I use a paring knife and cut each biscuit in half horizontally. You can use either method.  Flatten each biscuit half with your hands to shape and thin them out a little.




















Add about a tablespoon of apple filling on each round of dough. Once you have topped each round, stack the dough rounds on top of each other in groups of four. Continue to do this until you have 4 stacks of four using all 16 dough halves.
























Now carefully gather each stack of four and lay them in the loaf pan, arranging it so that it fills the pan. Don’t worry about making them even or that they are not the same size. They will all rise together later.
























Cover the loaf pan with foil and bake for 30 minutes. Then remove the foil and bake for an additional 10-15 minutes, or until bread is golden brown.

Remove the pan from the oven and let it rest on a cooling rack for about 5-10 minutes. Then flip it upside down on your rack to let it continue to cool. While the bread cools make the glaze.




















White Glaze

1 ½ cups powdered sugar
¼ cup half and half or more if needed
1 teaspoon vanilla

Simply whisk together the powdered sugar and half and half a little at a time to get the consistency you want. I like my glaze thick so I don’t use a lot of liquid. Once you get the right consistency, add the vanilla and whisk again. Drizzle generously over fritter loaf.

Or for a real treat make the cream cheese glaze.....




















Cream Cheese Glaze

4 oz. cream cheese, room temperature
1 cup powdered sugar
1/4 cup butter, room temperature
½ teaspoon vanilla extract

Combine cream cheese and butter in a microwave safe bowl and microwave at 15 second intervals until it is softened enough to stir it together. Add powdered sugar and vanilla and stir until fully combined. Drizzle over bread and enjoy!

Warm Apple Fritters

























There is nothing quite like warm apple fritters on a cold morning with a fresh cup of piping hot coffee and a warm fire going with fur babies at your feet and home made bread baking in the oven. Will you join me?

Warm Apple Fritters

1 cup All Purpose Flour ...
¼ cup Sugar
¾ tsp Salt
1½ teaspoon Baking Powder
1 teaspoon Cinnamon
⅓ cup Milk
1 Egg
1 cup Chopped Fuji or Gala Apple
Oil for frying

Glaze:

2 cups Powdered Sugar
1½ Tablespoons of milk or more as needed
1 teaspoon vanilla Extract, optional

Combine flour, sugar, salt, baking powder, cinnamon. Stir in milk and egg until just combined. Fold in chopped apple.

Pour oil into large deep skillet so that it is approximately 2 inches deep. You can also use a large soup pot or dutch oven or even an electric fryer. Heat oil to about 375 degrees. Your oil is ready when a small piece of fritter dough floats to top. Carefully add dough to oil in heaping tablespoons. 



























Cook until brown, about 2 minutes, then carefully flip. Cook another 1-2 minutes, until both sides are golden brown. Transfer briefly to paper towels to absorb excess oil, then transfer to cooling rack. Fry fritters a few at a time.

Make glaze by stirring milk and powdered sugar together in a small bowl. Drizzle over apple fritters. Wait approximately 3 minutes for glaze to harden, then flip fritters and drizzle glaze over the other side. Best served warm.
