Pumpkin Muffins

It's that time of year where all our pantries have cans of pumpkin, usually left over from last year! And this is one of those simple recipes that calls for all the things we usually have on hand. There is nothing like a cup of hot coffee and a warm pumpkin muffin to welcome Autumn.
Pumpkin Muffins
1- 15 oz. can of pumpkin
3 cups sugar
1 cup vegetable oil
2/3 cup water
4 eggs
3 and 1/2 cups flour
2 teaspoons baking soda
1 and 1/2 teaspoon salt
1 teaspoon cinnamon
1 teaspoon nutmeg
1/2 teaspoon ginger
powdered sugar
Mix the pumpkin, sugar, oil water and eggs together until combined. Then add the remaining ingredients and bake for 20-25 minutes in a greased muffin pan on 350 degrees. Remove from oven and cool for about 5 minutes. Dip each muffin top in powdered sugar. Makes 24 muffins.
