For those of you who follow my page on Facebook and here at the Welcome Home Blog, you already know that my fur babies are my family and I love them more than anything.  I will do whatever it takes to keep them healthy, safe and happy. I don't care what it takes or what lengths I have to go, I want to do whatever it takes to make sure I am doing my part to prolong their lives and keep them happy and healthy.  Especially when it comes to choosing the right food.

Cooper loves this food!  I have never seen him enjoy any food more and I feel good after feeding him what I know is a nutritious, healthy meal.  Oracle is a complete dog food with big chunks of freeze dried meat. Simple Bacon and Egg Hash

  

I have made hash a million times it seems.... and each time I come up with a faster, easier way to make it.  I like cornbeef hash, sweet potato hash, any kind of hash.  But when I want something delicious and easy and quick, I run to the store and buy some shortcuts. You will love this breakfast!   


Simple Bacon and Egg Hash

1 package  Simply Potatoes diced potatoes with Onion
8 strips of bacon, fried or oven baked
2 tablespoons olive oil
2 tablespoons butter
4 large eggs
Salt and pepper to taste

  
  

Simply Potatoes are found in the refrigerated section.  They come in diced, diced with onions, and steakhouse diced with seasonin
gs.  Use the one you like. 





  



I never fry bacon anymore.  Not since I discovered how quick and easy it is to bake it.  No mess, no fuss and no shrinkage.  Turns out perfectly every single time!  Simply lay your bacon on a rack over a lined pan and bake at 350 degrees for 10-15 minutes.


 

 

 

Beautiful, perfect bacon every time!  Drain on paper towel.

 

 

 

 

 

 

 

 

 

 

 

 

Next you are going to crumble or finely chop the bacon and set aside. 










 
 
 
 
 
 
 
 
 
 
 
 
 
 
 
 
 
 
 
 
 
Melt the butter and oil in a large non-stick skillet over medium heat. Sauté the diced potatoes until lightly browned.  
  
 

































Mix in the chopped bacon and spread out evenly over bottom of pan and press down on the mixture with a metal spatula. Let it fry for about 3 minutes between flips. Then flip sections over in the pan so that they brown on the other side. Press down again with the spatula. You should hear it sizzle as it browns. Continue to cook in this manner until the potatoes and the bacon are crispy. Add plenty of black pepper, and salt to taste.  Remove from heat.


Make 3-4 wells in the mixture. Break one egg into each well.       Sprinkle with salt and pepper. Cover with lid until eggs are set and have reached desired doneness.   






























You can also put the skillet in the oven and bake at 325 degrees for about  20-25 minutes or until eggs are set. 




 


  
Using spatula lift out hash with eggs and serve on a plate.  Enjoy!

Meat Loaf Cupcakes with Mashed Potatoes

1 pound extra lean ground beef
1/2 pound bulk sweet Italian sausage
1 cup Italian-seasoned breadcrumbs
1 cup shredded carrots
1 cup tomato pasta sauce
1/2 cup water
2 Eggs
1/2 cup finely chopped onion
1 teaspoon finely chopped fresh garlic
1 teaspoon dried oregano leaves
1/2 teaspoon salt
1/2 teaspoon pepper
6 (3/4-ounce) slices Land O Lakes® Deli 4 Cheese Italian Blend cheese
Potato Topping
1 1/4 cups water
6 (3/4-ounce) slices Land O Lakes 4 Cheese Italian Blend, cut into quarters
2 cups mashed potatoes whipped with butter and milk
1/2 teaspoon salt and pepper to taste

Heat oven to 450°F. Spray 12 cup muffin pan with no-stick cooking spray. Place muffin pan onto 9 x 13 inch baking pan; set aside.

Combine all meatloaf ingredients except cheese slices in large bowl; mix well. Stack 6 cheese slices. Cut into 4 even strips; then cut across into thirds to create 12 small square stacks of cheese.

Shape about 1/3 cupfuls meatloaf mixture into 12 (2 1/2-inch) balls. Press 1 stack cheese into center of each ball, covering evenly with meat mixture so cheese is in center. Place stuffed meatloaf mixture into muffin cups. Bake 20-25 minutes or until internal temperature is at least 165°F and meat is no longer pink.

Meanwhile, combine left over mashed potatoes and 6 cheese quarters and cook over medium-high heat until cheese is melted. Top each cupcake with about 3 tablespoons potato mixture over each meatloaf; sprinkle with paprika, if desired. Serve immediately.

My Classic Summer Potato Salad





















 




Everyone has their own favorite potato salad and most tend to make it just like their mother or grandmother. It's one of those things that you are fussy about if you're like me. I like good old fashioned potato salad that steers clear of that vinegar taste that you get in the grocery store.  Do you add pickles or dill or relish?  Do you add the eggs or leave them out? Do you use mayonnaise or Miracle Whip?  Do you add mustard?   This potato salad recipe is the one I grew up with and I love it warm or cold.  It's simple to make and I never change it.


Classic Summer Potato Salad

3 lb russet potatoes (approx 6 medium)
salt (1 teaspoon per quart of water
2 large hard boiled eggs
3/4 cup celery (about 2 ribs), diced or chopped
1/2 cup sweet onion, chopped fine
1/2 cup mayonnaise
3 tbsp prepared mustard
1 teaspoon celery seeds
salt and pepper to taste

Peel and dice the potatoes into approximately 1" ­inch cubes. Cover the potatoes with cold water and then bring to a gentle boil. Add salt and simmer until tender, about 7 to 9 minutes. Do not over cook.  Drain well and place potatoes in large mixing bowl.  Allow to cool.


























Mix together the mayonnaise, mustard and celery seeds. Add in the onions and celery and blend well.  Gently fold in the chopped hard cooked eggs. Season with salt and pepper to taste.  Cover and refrigerate for at least 30 minutes. You can serve the salad warm or chill so the flavors have a chance to meld together.

♥ Creamy Shrimp Corn Chowder
























Sometimes you just need a bowl of hearty soup to comfort your soul on a cold snowy day. I made this over the weekend and froze it for a day like today. Having it now with some cheddar cheese biscuits....oh yum!

Creamy Shrimp Corn Chowder

4 slices bacon, chopped...
1/2 cup onion, chopped
1/2 cup celery, chopped
6 small red potatoes, chopped into bite sized pieces
2 cups of sweet corn (frozen or canned)
1/4 teaspoon dried thyme
4 cups chicken broth
1/4 cup flour
2 cups of half-and-half (heavy cream if you like your soup thick and creamy)
1 lb. uncooked large shrimp, peeled
1/2 teaspoon of Old Bay seasoning (optional)
pinch of red pepper flakes
1/2 tsp. salt
1/8 tsp. pepper

In a large Dutch Oven or soup pot, fry the bacon over medium high heat until almost crispy. Add onion and celery and cook until soft and translucent. Whisk in flour and continuing whisking and cooking until golden brown. Add the chicken broth, potatoes, corn, thyme, Old Bay, salt, and pepper. Bring to a low boil and then reduce to simmer for about 15 minutes, or until potatoes are fork tender.

Meanwhile, spray a large sauté pan with nonstick spray and over medium high heat saute the shrimp until pink and cooked through....usually about a minute or two per side. After the shrimp have cooked, remove from pan and chop into bite sized pieces and set aside. 




























One potatoes are fork tender, pour in half and half or heavy cream and stir until thickened. Add chopped, cooked shrimp. Simmer soup for another 10-15 minutes and ladle into bowls and serve.

I recently went looking for a new food for my girls. Not that I don't love Stella and Chewy's Freeze Dried Meal Mixers anymore....I just can't afford it. The food I wanted to find had to have ingredients that were fresh and wholesome. Things that I would shop for if I were making it myself.
