Mom's Southern Pineapple Casserole

 

 

I can’t remember a holiday when Mom didn’t serve this wonderful casserole.  It’s a delectable classic Southern side dish that’s most often served around the holidays. It’s a surprising combination of flavors that form a delicious mash-up of sweet and salty. It’s especially good with a baked holiday ham.  Don’t think the combination of pineapple and cheese doesn’t work. It truly does! 


Mom's Southern Pineapple Casserole

6 tablespoons melted butter

2- 20 oz cans pineapple tidbits drained, reserve 1/3 cup juice

1 20 oz can crushed pineapple, well drained

1 cup granulated sugar

2 cups grated sharp cheddar cheese divided

1/3 cup + 1 tablespoon all-purpose flour

1 sleeve Ritz crackers, crushed

 

Preheat oven to 350°F. 

Grease a 9 x 13-inch butter dish with butter. Set aside. You can also use a round deep-dish pie pan as I did.

 

 

 

 

 

 

 

 

 

 

 

 


Add pineapple tidbits, crushed pineapple and sugar to a large mixing bowl. In a separate bowl mix together reserved pineapple juice, flour and 1 cup cheese. Add to pineapple, mixing until fully combined.

 

 

 

 

 

 

 

 

 

 

 

 


Pour evenly into baking dish. Sprinkle reserved 1 cup cheese on top.

In a separate bowl, toss together melted butter with crushed crackers until fully moistened. Sprinkle over cheese.

 

 

 

 

 

 

 

 

 

 

 

 


Bake for 35-45 minutes until bubbly and golden.  Let stand 5 minutes then serve.

 

 

 

 

 

 

 

 

 

 

 

 


NOTES

You can use pineapple chunks if you like, but I prefer the smaller tidbits.

 

 

 

 

 

 

 

 

 

 

 

 


Use sharp, mild or medium cheddar cheese. I like Sharp Cheddar because it gives a bolder flavor to the pineapple.

Use Pineapple packed in water or its own juice.  I like the later because it is sweeter.

I recently went looking for a new food for my girls. Not that I don't love Stella and Chewy's Freeze Dried Meal Mixers anymore....I just can't afford it. I needed to find a food that would be healthy, first and foremost. I mean, not just looking at the label and seeing meat as the first ingredient...what a rip off that is. We are finding out every day that the meat used in kibble is not always good. Meat from slaughter houses, euthanized animals or food sitting in non-refrigerated trucks....tainted meat is not good. The food I wanted to find had to have ingredients that were fresh and wholesome. Things that I would shop for if I were making it myself. So, I searched and searched. Read label after label. And I finally found it. I had to go back to 7 years ago to the very food I fed my Cooper and Katie..... Dr. Harvey's.

You simply add a scoop of Canine Health and a little water to make it the consistency of oatmeal. I like to make it a little wetter and they love it even more. Doggie Salmon And Rice Bites
























I love  Dr. Harvey's Fine Ground Veg To Bowl.  This mix of healthy vegetables and herbs is wonderful for those of you who want to start feeding your fur babies a delicious healthy diet. I can't say enough good things about it ....it's affordable, it's convenient to use and so easy to make, and it's so healthy for your babies! 

You simply scoop it out and add a little hot water and your favorite oil.  You can use olive oil, canola oil...I use Omega 3 fish oil and a Vitamin B complex oil that blends in perfectly and makes it even healthier. 

Then simply add your meat. You can use beef, turkey, salmon or any other fish.  Sometimes I buy cube steaks or I often use ground beef.  I also use turkey cutlets or tenderloins or I buy ground turkey. You can make it anyway you like and then just add it to your mix. Sometimes I add some chopped apples or pears or blueberries. You can make it as delicious and healthy as you want.

Lately I have been using Dr. Harvey's fine ground Veg to Bowl to develop my own homemade recipes for my fur babies. Here's one I want to share you with you today....


Doggie Salmon And Rice Bites 

1 1/2 cups brown or white rice
1/2 cup mashed sweet potato
1 tablespoon unsalted butter
1 tablespoon olive oil
2 cups fresh cooked salmon 
1 scoop of Dr. Harvey's Fine Ground Veg-To-Bowl 
1 scoop of water for mixing

Preheat oven to 350 degrees.  Cook rice and set aside to cool. Microwave sweet potato until very soft. Split and mash with unsalted melted butter until smooth. Set aside to cool. 




















In a skillet melt olive oil over medium high heat and then sear the salmon on one side until lightly browned. Flip salmon over and sear on the other side and allow it to cook for about 2 minutes longer. Begin breaking up salmon with a fork into small pieces and stir while cooking. Reduce heat to medium. You want the salmon under cooked and still pink in the middle. Remove from pan and allow to cool.





















Add one scoop of Dr. Harvey's pre-mix to bowl. Add just enough water to moisten. Stir and allow to sit for 3-5 minutes. 




















Add salmon, rice, and pre-mix to a large bowl and using hands mix until all ingredients are well blended. 


Form into small balls and bake at 350 degrees for 8-10 minutes.  Serve warm or cold.
